WIAW+Summer Break Mode

Happy hump day!!  I’m super excited since my summer break has started–I’m off until the first week of July, and then will have four day work weeks until school starts back in August.  I can’t wait to have Friday’s off!

I’ve been enjoying the time with my parents while they’re in DC and relaxing.  Yesterday I took a two hour nap and it was glorious.  I heart summer vacation–it gives me the time I need to reset my batteries before the kids return!

I’ve been having some yummy meals too with my parents in town!  Which leads me to this weeks WIAW post!

I was able to enjoy a leisurely breakfast after a trip to the gym.  Normally I have to rush home to shower and get ready.  I told Brandon to go ahead home without me and I’d walk home when I was done.  I did 20 minutes of intervals on the elliptical plus lower body and core work, then about a 15 minute walk home.  Since I focused on strength training, I refueled with a protein smoothie!

Sorry it’s almost gone, I was hungry!  I blended frozen strawberries, spinach, 1/4 avocado, almond milk and Sunwarrior protein.

After breakfast, my momma and I headed to Costco to get some essentials.  Actually, Brandon asked if I could pick up some things.  He loves when I’m on summer break too because he can leave me a to-do list (barf)!  I picked up a bag of dark chocolate mango to try!

So good!  I had a few pieces along with a Fage yogurt flip as a mid-morning snack.

Lunch was all about leftovers!  I combined mixed greens with a leftover piece of teriyaki salmon, dried cherries, fresh mozzarella and cashews, topped with honey thyme balsamic dressing from TJ’s.

I love fresh mozzarella but almost never buy it.  Probably because I’d eat it in like a day.  Story of my life.

Brandon and I treated my parents to dinner at Montmartre, our favorite local French restaurant in Eastern market.  I love it so much–it’s cozy, has a great vibe, and the food is always good.  I had lamb loin with a carrot harissa purée, bok choy, and shiitake mushrooms.

Lamb is by far my favorite meat.  I never make it for myself but love ordering it when we’re out.  This dish was so good and not heavy at all.

Not pictured: the two bottles of wine we had and the cup of gelato I had for dessert.  I ate/drank those too fast.  Shocker.

Hope you all have a great Wednesday!  My momma and I are off to West Virginia to visit family friends overnight!

What’s something you never make for yourself but love ordering when you’re out?

Anyone else on summer break mode?!

What I Ate Wednesday+I Ran One Mile!

Happy hump day!  And welcome to my second WIAW post!  I always think WIAW posts are fun, since hello, it’s all about food.  But before I start talking about food, I wanted to share that I ran a mile Tuesday morning!!!

I can’t tell you how happy I felt running.  There’s still just a teeny bit of tightness above my ankle, but no pain.  I’m going to take it slow and ease into building my mileage and pace back up.  Also, love my new Saucony Triumph ISO 2’s!  So comfy and light, with plenty of cushion for my tootsies.

Breakfast is, without a doubt, my favorite meal of the day.  I start thinking about what I want to eat the second I’m awake.  I seriously don’t get people who don’t eat breakfast–that concept is just alien to me.  Since the temps are rising, breakfast was all about the return of the protein smoothie!  Don’t get me wrong, I love oatmeal, but the thought of a hot breakfast when it’s 80 degrees outside just isn’t appealing to me.

I combined frozen strawberries, 1/4 avocado, spinach, protein powder, unsweetened cocoa powder and almond milk.  I love adding avocado to my smoothies to make them extra creamy, plus the healthy fats keep me fuller longer.  I feel like the finished product of my smoothies never looks appetizing though.

But even if it looks like puke, it tastes delicious!

I almost always pack my lunches during the week to save some dinero.  And it’s almost always salad!  I know a lot of people think salads are boring or ‘rabbit food,’ but I love them and think you can make them filling by adding chicken, sweet potatoes, or whatever else you want.

I love adding avocado, cashews, dried cherries (I love that TJ’s has dried unsweetened cherries!) and some sort of protein.  I ended up adding a veggie burger to my salad, then topped it with my fave dressing from TJ’s.  The honey thyme balsamic is so good!

After lunch, I snacked on a dark chocolate walnut, peanut, fig and date bar.  I’m always craving chocolate/something sweet in the afternoon and these are my favorite bars–they’re chewier (AKA easier to eat) than Kind bars, and only have 6g of sugar.

Since Brandon has work stuff going on pretty much every night this week, I’ve just been making easy dinners that require little cooking, which translates into little clean up!  Dinner was a combination of roasted asparagus (I love that you can get pre-trimmed asparagus at TJ’s), spicy Korean chicken sausage, and avocado!

The only thing that sucks about roasted asparagus is I’m not a huge fan of it the next day.  It’s always too soggy and just makes unhappy.  But I hate wasting food so I just end up eating it while washing it down with some wine.

I almost always have a little treat in the evenings after dinner, whether it’s a piece of dark chocolate or an Oreo (or three).  I bought dark chocolate covered almonds from TJ’s and decided to have a handful of those!

Check out that naughty little sassafras eyeing my almonds!  I told him “no chocolate for doggies!!!!” then gave him belly rubs, so he’s all good.

Have a great Wednesday!

Are you a big breakfast person, or skip it?

What’s in your lunch bag today?

What I Ate Wednesday+Track Intervals

I decided to participate in my first What I Ate Wednesday (WIAW) post!  I’ve seen other bloggers, like Lisa and Meredith, share weekly WIAW posts and I always like to see what other people eat.  Because I mean lets be honest, I need to know what I’m missing out on and what I need to buy at Trader Joe’s.  I’m just keepin it real.

Anyways!  I headed out in the morning for the track at Gallaudet University (my grad school alma mater) for my speed session.  Laura wanted me to run 6x4min repeats at 5k-10k pace, with a 2 min recovery interval between each.  It was already in the mid 60’s and sunny at 6:30 so I know this would be a doozy, but I told myself to suck it up and put in the work.

I was super annoyed because I couldn’t find the dang interval setting on my Garmin–I had the manual on my phone for reference and looked at it like three times and couldn’t figure it out, so I said screw it and decided to just pay attention to the time.

This workout was hard.  Like, I wanted to quit after my third interval.  But I reminded myself that tough runs like these can only make me stronger.  And, I nailed my pace for each interval!  Each one was between an 8:30-8:45/mile, with the last one closer to 9:00/mile.  I was a sweaty mess after that, but I felt awesome.

I had to hurry home after since I was waiting for an electrician to come, so I made a quick cup of coffee.

Followed by chocolate protein oatmeal with dark chocolate almond butter and blackberries!

Since I had the day off and pushed through my speed workout, I decided to treat myself to a pretty amazing mid-morning snack.

A chocolate creme brûlée doughnut from District Doughnut! This baby was heaven.  I don’t even know the last time I had a doughnut, but I’m glad I saved it for something as delicious at this.

Lunch was leftover riced cauliflower mixed with Cuban style black beans, carnitas, salsa verde and avocado.

Followed by a mid-afternoon snack of a chocolate peppermint Lunar bar (best flavor) and lots of water while soaking up some vitamin D.

I also squeezed in an afternoon nap, which was money.  I wish we could have siesta time at work, I feel like everyone would be happier.

I woke up to this face after my snooze fest.  Apparently it was dinner time.

Since Brandon is still traveling for work, I didn’t feel like cooking or making anything fancy.  So I made my favorite salad combo–mixed greens wth chicken, roasted sweet potatoes, dried cherries, cashews, and avocado!

I love simple, easy dinners.  Now time to foam roll and relax some more before my (likely rainy) 3 miles tomorrow!

What were your meals like?
